Step 1: The dosage - How much mate tea do I need?

We recommend 24 grams of yerba mate per liter of water. If you don't have scales, you can use a tablespoon instead. One heaped tablespoon is approximately 6 grams of yerba mate. That means you'll need 4 tablespoons of yerba mate for one liter of water. Pour the desired amount of yerba mate into the empty teapot.

Since not everyone has scales and to simplify your daily use of mate, we generally provide the quantities in tablespoons on all caámate packages.

Note: Dosage is an important factor in taste. If you use too little mate tea, the infusion will be weak and watery; if you use too much, it will be very strong and bitter.

Step 2: Heat and pour water - Does the water temperature matter?

Yes, the water temperature plays a crucial role. The optimal water temperature is between 65° and 75°C. Heat the water and pour it into the French press. Remember: If you pour the water over the mate that's too cold, it will taste bland; if you pour it over water that's too hot, it will become bitter.

Tip: If you don't have a kettle with adjustable temperature or a thermometer, you can use the one-third, two-thirds rule of thumb. Simply boil two-thirds water (100°C) and mix in one-third cold water (tap water); this will give you water that is approximately 75°C.

Step 3: Stir and put the lid on.

After pouring, most of the yerba mate tea will rise to the surface and not be completely submerged. Therefore, stir the mate well after a few seconds to ensure all leaves are evenly coated with water and that all the mate aromas can fully develop in the French press.

Now place the lid on the pot and press the plunger down slightly so that all the leaves are submerged. This ensures that all the ingredients are extracted and that a constant temperature is maintained.

Step 4: The steeping time - What do I need to pay attention to?

Depending on how strong and intense you like your caámate, let it steep for 1-2 minutes so that all the flavors can develop optimally. For a milder taste, steep for 1 minute, and for a stronger aroma, steep for 2 minutes. After the desired steeping time, slowly and evenly press the plunger all the way down, and you're done. Now you can enjoy your perfect French Press Mate .

Pay attention to the time. If mate steeps for too long, it becomes strong and bitter; if it steeps for too short a time, it becomes thin and watery.

Tip: If you don't want to drink it all in a short time, pour the rest into a thermos or other container to prevent over-extraction.

Patentzeichnung von Henri-Otto MAYER/ Jacques-Victor DELFORGE, 1852

The history of the French press.

As the name suggests, the French press likely originated in France. The first patent for this method of preparation was filed in 1852 by the Frenchmen Henri-Otto Mayer and Jacques-Victor Delforge. Much later, in 1928 and 1933 respectively, the Italians Attilio Calimani and Giulio Monet filed their further developed patents, which significantly improved the filter, preventing any fine particles from escaping the sides. This was the precursor to the modern French press as we use it today.

Although its origin and who invented it are debated – the French or the Italians – one thing is certain: the French press is an excellent method for preparing a delicious, intense and full-bodied mate tea.
